Cauliflower-Crust Pizza

Ingredients:
1/2 large head cauliflower
1 large egg white
1 cup shredded mozzarella cheese (I used mozzarella rice cheese because I try to use as little dairy as possible)
1 tsp dried oregano
1/2 tsp garlic powder
cooking spray

My toppings:  onion, green peppers, jalapenos, spinach, kalamata olives


Directions:

  • Wash cauliflower and cut it in half.  You'll only need half for one pizza, so cut the half you're using into quarters to make it easier to handle.
  • Use a grater to "rice" the quartered cauliflower until you have about 2 cups worth.  Place in a microwave safe bowl. (I just riced mine in my ninja blender.  You could probably use a food processor as well).
  • Microwave for 6-8 minutes, or until heated through and softened.  Let cool for 15 minutes.  Stir occasionally to release steam.
  • Preheat oven to 450F and line your pan with parchment paper or spray with non-stick cooking spray.
  • Add the egg white, mozzarella, oregano, and garlic to the cauliflower and mix well.
  • Pour onto prepared tray and flatten into a square or circle shape.  You'll want it pretty thin, but thick enough to still hold together during baking.  Spray top with non-stick cooking spray.
  • Bake for 15 minutes or until golden brown.
  • Turn on your broiler.
  • Top your pizza with whatever you like, and broil for about 5 minutes or until cheese melts.

You won't be able to cut and hold this like a regular slice of pizza.  You will need a plate and fork.
